Flutterheart Linzer Cookies

It all started over 20 years ago with a butterfly cookie that made my heart flutter and I've come full circle to share this sweet buttery linzer cookie that is as pretty as it is delicious.

Back then it wasn't easy to source cutters and decorating tools, but I was determined to have that cutter, and along the way I found and collected so many other beautiful baking and decorating bits and pieces. I kinda think that I might not have this blog if it was not for that cookie that ignited my passion for all things baking.

Of course you will not have the same difficulty finding a cutter as I did as these days it's as easy as clicking a button (some links below).


I think these cutters are so cute that they can be made with minimal decorating so I've only added a dusting of icing sugar to let the shape shine.

I can only hope one of my blog posts might inspire someone else the same way I was inspired by a cookie all those years ago.

Hazelnut Linzer Cookie Recipe makes around 12 double filled Flutterheart butterfly cookies
I used a butterfly cutter (approx 8cm or 3.25"), heart plunger and small rose leaf#/teardrop shape cutter (12mm or 0.5") . #my rose leaf was from the Ateco 12 piece flower & leaf cutter set see below example.

You can just use a regular linzer cutter instead.



225 g (8oz) unsalted butter room temperature
100f (3 1/2 oz) or 1/2 cup sugar * I used caster (superfine) sugar
1 large egg yolk
300 g (10 1/2 oz) or 2 cups plain (all purpose) flour
1/2 tsp ground cinnamon
pinch of salt
80g (2 3/4oz) hazelnut meal (ground hazelnut) # you can substitute almond if preferred
1/2 cup cherry jam (jelly)

In the bowl of a stand mixer cream together the sugar and butter at high speed for a couple of minutes until light and creamy. Reduce the speed to medium low and mix in the egg yolk, scraping down the sides as required. Add the flour, hazelnut meal, cinnamon and salt and mix at low speed until combined.

Wrap the dough in plastic wrap and chill in the fridge for 1 to 2 hours until the mixture is firm.

Dust your workbench with flour and generously flour a rolling pin, then roll out the dough and cut out shapes as desired. (If you have difficulty rolling out this dough you can roll it out between 2 sheets of nonstick/baking paper, then chill until ready to cut).

Cut out butterfly shapes, place the cookies on trays lined with baking paper. Leave half the cookies as they are and cut shapes out of the remaining half, using a heart plunger cutter to cut a heart in each wing and teardrop cutters to cut 2 shapes at the bottom of each wing (see picture below).


Place the trays into the refrigerator to chill for 1 hour.

Preheat the oven to 180C (350F) and bake the cookies until golden (around 12 - 15 mins).

Allow the cookies to cool on the tray.

Place the jam (jelly) in a microwave safe bowl and heat at high for 20 - 30 seconds until just starting to bubble. Stir until smooth.

Place the jam (jelly) into a disposable piping bag (or ziplock bag) but a small hole in the corner and pipe jam onto half of the cookies (the half without the bits cut out). Gently press the remaining cookies onto the top of the jam topped cookies using the jam to stick the cookie into place.

If desired pipe a little extra jam into the heart and teardrop cut outs.

Cookies in picture have been dusted with icing sugar (powdered sugar) just prior to serving.

Chocolate Cherry French Macarons


I had some left over macaron shells the other day and have been playing around with different fillings.


I think this chocolate and cherry one was the most delicious, the shells are french almond macaron made with the recipe in THIS POST (CLICK HERE).


Filled with a little chocolate ganache and black cherry halves and some dots of white chocolate ganache.

Then finished with another dab of ganach and a cherry.

Oh Sweet Mum - A rustic pie buffet party table



I love my mum.

Without a doubt she has been the hugest female influence in my life. She taught me to cook, to love and to be the best I can be, she made me who I am and if my own children end up loving and respecting me as much as I do my own mother...then I'll be pretty happy and call my time here a success.


So when Jacki from Blissfully Sweet asked if I would like to be involved in an E-vent being organised in memory of her own mother I was honored to participate.

When I signed on I had no idea how gorgeous the Oh-Sweet Mum E-vent would be. Jacki co-ordinated a group of super talented stylists, artists, florists, florists, cake decorators and more from within Australia and around the world to come up with a day of amazing events.

Anyway......my mission (if I chose to accept it) was to create a Pie, Tart and Slice E-vent and I decided the best way would be a dessert buffet.


That little Mission Impossible pun is due to the fact that Pies are not really my thing.

But I think I met the challenge and came up with a rustic inspired pie and slice table with my own Bubble and Sweet spin. Although there are a couple of traditional pies on display I have included 'Pie' Macarons, Whoopie Pies, Pie Pops and pretty little Chiffon Pumpkin verrines with mini macarons and pecan pie crust bites.

I'm pretty happy with the end result which I'm going to admit is only this good due to the contributions of Naomi V Photography and Ah-Tissue.




With the original concept of the Oh Sweet Mum E-vent in mind and in the interests of women's health, I am going to donate a dollar for every comment on this pie table post up to $100 to the National Breast Cancer Foundation.  (I know that there are many other important aspects of women's health and other great organisations I have just chosen this one this time).

Also as a mother to 3 young children myself I know that sometimes my own health takes a back seat to everything else going on. But regardless of what is happening I do make sure I always keep any of my regular doctor's check up appointments and I try to remember to keep up my own self-examination routine. Please if you take anything from this post today I hope that it how important you are to your friends and family and that you should look after your health.... and the same applies to all you men out there as well :)

(This was my favorite photo of the day - apart from the girls of course - 
I think because they were my favorite treat - super yum)

Cherry Love Cookies for the Polkadot Prints printable range


Do you love cherries like I love cherries.


If the answer is yes you must check out the gorgeous new Polkadot Prints Cherry Love printables range.
 

Yup Love It! Told you. Especially the straw tags. I Love them! They are the new must have bling for you party drinks and would also look great on cake pops as well.


I baked up some cookies and some little cherry pies to go along with the printables for a set of photo's taken by Naomi V Photography.



The cookies are so simple, just a large round sugar cookie topped with white ready rolled fondant, a couple of smaller circles of ready rolled fondant and then a hand shaped stem and leaves.


The green ones are a ruffled round cutter (I used one from my Ikea cookie cutter set) sugar cookie topped with a green round ready rolled fondant cut out. Hand shaped round balls of red fondant, hand shaped stems and leaves and then some dots of royal icing around the edges.

Oh and the pie crust recipe is from my book being released in December, Sweets on a Stick, it's the sugar pie crust recipe I use to make all my pie pops with.
