Tim Tam rush pops

If you follow me on facebook you've probably already seen this photo, but what you might not have seen is that this is not just a normal everyday white Tim Tam truffle cookie pop, it's a Tim Tam Rush pop.

Or maybe when you were growing up they were called a Tim Tam Slam.

Or maybe you think I'm a little weird and you don't know what I'm talking about.

It's when you get a tim tam and slurp your coffee up through it and pop the whole lot in your mouth. I was never a huge fan back in the day but when I was growing up they only had original tim tams. Maybe if they had white tim tams I might have been a convert.

Although I'm not so sure, never was a big fan of soggy. But with these pops you get the yummy coffee/tim tam flavour and none of the unpleasant sogginess. Really the best of both worlds don't you think.

Waiting to be made into pops, the coffee ones at the front and plain old white tim tam at the back

I am a convert now and once you try them you might be too.  Recipe after jump.

White Tim Tam Rush pops
(this recipe is pretty much the same as the normal white tim tam with coffee added but I'll just put it here so you don't need to search for it)

Packet White Tim Tams (165g) or similar biscuit/cookie maybe golden oreo
40 g (1 3/8 ounce) cream cheese
1 heaped teaspoon instant coffee
Packet of Wilton Candy Melts and some copha
6 inch lollipop sticks

blend all ingredients in a blender until well mixed.

Shape into balls or disks, if you are making into pops, inset a stick into each to make a hole and then remove. Refrigerate until chilled.

Melt 'chocolate' until smooth, I use the microwave on short bursts at med-low. If necessary add melted copha to get the chocolate to a thin dipping consistency. Dip the end of the cookie stick into the melted chocolate and then insert into the Tim Tam Rush balls in the hole you have already made. Repeat for all and return to fridge to chill/set.

Remelt the 'chocolate' if necessary. Dip each of the tim tam rush balls into the melted chocolate, ensuring you completely submerge each one. Carefully tap to remove excess chocolate and pop into styrofoam to set standing up.

I decorated these pops using fondant cutouts made with a PME medium snowflake plunger.

Inspiration note, I don't say it everytime but Bakerella was my initial inspiration for cake pops, now I just play around with different versions myself.

  13. The snowflake details on them are so cute! I've made tim tam pops before but I prefer regular tim tam pops to white ones.
